Day 14: Tome de Bauges
More delicious mountain cheese! Seriously, are there any of them that are bad? Today’s is one which, by looking just at slices of the paste and rind, your first guess may be wrong. This is not tomme de Savoie. It is tome de Bauges, and I had never heard of it until I learned about all the AOP cheeses during my training at Mons. This mild and creamy AOP cow’s milk cheese comes from the Savoie region and is bound to be a crowd pleaser.
