Day 16: Ossau-Iraty

More mountain cheese, but from different mountains. Ossau-Iraty comes from the France’s Basque country down near the Pyrenees that stab up to form the French/Spanish border. Like all pressed sheep’s milk cheeses, it can be eaten at different ages, from young to quite old. This one is a farmstead cheese from one of my favorite restaurants in Paris and is consistently great. It is served with its traditional condiment of black cherry jam.
