Day 10: Crottin de Chavignol

Pocket-sized chèvre has sustained farmers and shepherds in the fields for centuries. Today it was my little snack as well. When young, goat's milk cheeses are mild, with a floury-smelling rind and a hit of sourness that reveals its caprine source. Well-aged, they are hard and pungent, like soap. This little AOP comes from the Centre-Loire Valley region of France.
