Day 13: Tête de Moine

I have a confession to make. I am smitten by two Swiss cheeses, one of which I ate today. Tête de Moine comes in squat cylinders which are set onto a device called a “girolle” and shaved into delicious flowers or “rosettes”. The thin slices really bring its earthy, grassy smell to the fore. And I swear sometimes I smell white chocolate!
